Asparagus is the most elegant of vegetables. These slender spears of delicious goodness class up every meal. At only 4 calories a spear, you can pretty much eat as much as you want. We love the healthy amounts of Vitamin C and K we get with every heavenly bite, even when we sauté them in garlic and butter… our favorite! Here’s a great tip – to store Asparagus, trim a bit off the bottoms and wrap the base of the whole bunch in wet paper towels. Place them in a plastic bag in the coldest part of your refrigerator – they’ll last up to 4 days this way.
