Sweet potatoes are naturally sweet, nutritious and very versatile. Although they are a familiar dish on Southern and holiday tables, Sweet Potatoes have been finding their way in more and more recipes throughout their fall-winter peak season.
One of our favorite ways to enjoy Sweet Potatoes is Sweet Potato Fries. In our version they are baked, not fried, and are high in vitamins A and C: Preheat your oven to 400°. Line two baking sheets with foil. Coat foil with cooking spray. Cut 4 medium Sweet Potatoes lengthwise into 1/2-inch thick strips. Place the Sweet Potatoes into a bowl and light lightly toss in olive oil. Sprinkle with salt and pepper and toss again. Arrange the fries in a single layer on your prepared baking sheets. Bake for 15 minutes. Turn fries over and back for 10-15 minutes more until golden brown. To finish, sprinkle with coarse salt. Tip: Because Sweet Potatoes contain more sugar than regular potatoes, they tend to cook unevenly if cut too thin.
