Zucchini

The word zucchini comes from the Italian zucchino, meaning a small squash, and was often called Italian squash as recently as 20 years ago. Zucchini may be at the back of the alphabet but they are at the head of our line for their versatility, easy preparation and friendly, mild flavor. Don't just settle for Zucchini in casseroles, they are delicious, pickled, baked, grilled or fried, and they love to be covered in parmesan cheese.
